in loving memory.

Tonight, I'm on my way to Seattle for not only the memorial, but the celebration of life for one of the strongest women I’ve ever known, Kerry Sussex. Sadly, Kerry (Erica's mom) was diagnosed with ovarian cancer in 2007 and for the past three and a half years, she's inspired those around her with her positivity during a long and courageous battle. As one of the original blogs I ever followed, I always loved Kerry’s tag line and have kept it close in mind and spirit… “It’s my journey, and you’re all coming with.”  I strongly encourage you to take some time to go back through the archives and read some of Kerry's posts that reveal wise words about life, faith, family, the power of the mind and what really matters the very most – love.

While visiting Erica, Dan & Dyllan in March, Kerry introduced me to her gluten-free “Magic Cookies.” They’re fantastic, guilt-free and she was passionate about sharing them with those around her. Make a batch in Kerry’s honor and share them with your friends and family. Kerry's life is a testimonial that it’s not the years in your life that count, it’s the life in your years.

Danny and I feel fortunate to have known Kerry and to have Erica and her family in our lives... we truly see Kerry's strength in Shmer, and it's no secret that she will forever keep the legend and faith of her mother alive. Lots of Love & Hugs to the Sussex's & Newton's.
 


Kerry’s Magic Cookies
Ingredients
4 eggs
1 ½ cup sugar
Teaspoon almond extract
1lb ground almonds/almond meal (Trader Joes)
Almond slices

Directions
Preheat oven to 350 degrees
Beat 4 eggs for about 10 minutes until fluffy
Slowly add 1 ½ cups sugar - slowly
Add almond extract
Fold-in 1 lb of ground almonds
Spoon onto parchment paper
Add an almond slice to garnish
Bake for about 10 minutes
